Pancole is a farm founded in 2009 in the Upper Valdarno.
The total area is around 12 hectares of which 5 are dedicated to vineyards, 6 to arable
land and 1 to forest.
The main activity is the production of wine, accompanied by a small production of
vegetables and oil.
We gave life to the farm as a natural consequence of our passion for a product that has
characterized this territory for centuries: the Sangiovese. Our main objective is indeed
to contribute to enhancing this product, giving it at the same time something unique.
The prerogative of the company is that of the full sustainability of the activity with the
least possible impact on the environment, trying to guarantee the biodiversity of intact
natural habitats; this is a requirement that positively influences the quality of life and the
survival of each one of us.
Behind the word biodiversity lies the secret of our work philosophy and of the relationship
we have with the territory. Our productions are limited to a few thousand bottles. We
have chosen to treat wine more than the numbers and, at the same time, each year is
markedly different from the other, precisely because our hand goes to enhance what
nature produces, without distorting it.
The company philosophy is to privilege the search for quality and a working method able
to guarantee a unique wine, produced in complete respect of nature and the territory.
We define ourselves as a “Biodiverse Company” because behind this term lies the secret
of our production philosophy and of the relationship we have with the ecosystem. Our
watchword is clear: attention to biodiversity. Respecting and enhancing the
characteristics of an environment and, consequently, of the products it offers, is the best
way to achieve organoleptic results that are unique and different from those of any other
area.
A Biodiversa Company is not simply a biological company, it is something more. Our
biodiversity is in the awareness that this approach has marked our origins and will mark
the future of Pancole.
Our vineyards are handled manually and we pay great attention to the selection of the
bunches, so as to bring healthy and whole grapes into the cellar. The only foreign
element that we insert into vinification is given by the use of selected yeasts and we limit
the use of sulfur dioxide to a minimum.
Low yields per hectare, hand harvesting, timely transport of grapes, selection in the
cellar, temperature control during fermentation are part of the company philosophy. The
vinification takes place in the traditional way in the winery of the company. Subsequently,
the aging takes place in French oak barrels or in steel tanks, depending on the quality
of the final product obtained by fermentation.
The entire production process is driven by the objective of influencing as little as possible
what nature has been able to do better than anyone else for centuries. The result is a
genuine, healthy wine strongly characterized by all that is present in our vineyard.
Since 2010 the company has been engaged in the production and bottling of superior
quality DOCG and IGT Chianti wines. The main vine present in the two bodies that make
up the property is Sangiovese (90%), with the contour of the other autochthonous wines
of the Chianti region such as Canaiolo (5%), Trebbiano and Malvasia (5%).
From this last harvest we started the first wine-making trials of our two new vineyards
planted in 2014: merlot and syrah.
The goal is always to get to produce these two types of grapes by putting in our way of
interpreting these products, respecting their typological characteristics
In addition to wine, we have a small production of EVO oil from our 300 plants around,
a product that we can in all effects define “natural” because the only intervention is that
of pruning, once every two years.
We also have a horticultural production, both summer and winter, which we carry
forward in our 7000 square meters of vegetable garden managed in full respect of
biodiversity.
The goal for the years to come is to start a small hospitality business, trying to offer
customers a genuine and simple environment, representative of the daily life of a family-
run farm

WINE TOUR & WINE TASTING
The visit consists of a walk through the vineyards, tour of the wine-cellar and discovery of production processes, tasting of our products.
Our winery is open every day (Mon-Sun) from 10am to 7pm
