The Tenuta San Jacopo’s organic: part and parcel of our philosophy.
All of our vineyards are cultivated according to the principles of the organic agriculture.
A careful respect of what the nature makes, that is completed with a winemaking process, aimed to enhance, without distorting, the fruit of the vine.
We already started the slow conversion in 2004, since we were sure that it was the right way to get a high quality grape without resorting to chemicals. We use green manure to organically enrich the soil and to make it more fertile, likewise we use native yeasts taken directly from our grapevines. The farm is then just an eco-system in balance, and our hands occur just to preserve it.
This ecosystem, in our vision, is the most real and peculiar expression of this land. We want the nature and the morphoclimatic features to be the creators of the scents and flavors of our wines. Chemistry could do nothing but standardize what the nature makes unique. For this reason, we have chosen to leave to our work a discreet presence, never invasive and always thought in order to enhance, without distorting, the fruits of the vine.
